KW: Cheesy Veggie Pancakes


Yesterday and today had been so warm, I welcomed the weather with open arms! I made this when it was cold, windy and rainy the days before when I wanted something a little heavier.

This is the first time I've tried this particular recipe from the cookbook Kuchnia Wegetariańska. I can't say it's the best recipe I've tried from the cookbook, but it was pretty good and made a good amount - it kept me well fed for three days! It's also a pretty cheap recipe, so it suited me well as a student with limited budget. I didn't end up using all the pancakes made out of this recipe for this recipe. I had some with icing sugar sprinkled on top and it brought me back to my childhood. My grandmother used to serve pancakes this way for my siblings and I because we used to live with her often as my parents were quite busy back then. Can't wait for summer break to come so I get to go home! Looking forward to July :)

Quick snack: Ham and Cheese Puff Pastries


Quick fix for late afternoon snack cravings!
Ham and cheese are always a good combination, yes? A classic combo of flavours. I made these today when I realised I have some things I'd like to use up - leftover puff pastry from a different recipe I've tried and several opened packages of cheeses.

This is more of an idea than a recipe, as it doesn't really need any sort of measurements. Just place everything on the pastry, fold them over and off into the oven they go! Very easy and very quick.

Quick & Easy: Tuna Subzi



Quick, easy and flavourful!

This is a good recipe to have around on busy days because it’s so quick to make and you can serve it with virtually anything, really. I normally just stuff my bread with it to make a quick sandwich or serve with some greens for a healthy and filling salad. It’s even good with rice!

I usually always have some leftover the next day, and I personally find it good straight out of the fridge too. I might be a little biased as I really, really like tuna in any kind of form – it’s one of my favourite fish but definitely not the cheapest and fish itself is already fairly expensive here in Poland. But tuna is so, so good. I definitely prefer it to salmon and luckily, it’s also much easier to find tinned tuna than tinned salmon in supermarkets over here.


On a side note, the weather is looking up here in Warsaw and it was so sunny the past week, although it has been raining recently. There are so many people outside doing fun things like cycling and taking walks. I’m so glad we’re past the grey and dreary days although I do not enjoy the heat as much! Also, warmer weather means finals are coming up and that’s something I never look forward to.
